Posible new world record

Default Posible new world record

Went diving with Alexis, Jahaziel, Shamir and Becky.
The kids wanted to try Blue water, so we went for
it for a while, Alexis had the oportunity to dive with
a Great hammerhead, awesome fat Shark, he had a blast.
We got a few fish, and I was lucky to shoot a Midnight
Parrotfish of 13 pounds, looks like it could be a new record.

Nice fish. I've been seeing more of those parrot fish around here lately. I hear there used to be a lot. Jake shot one a few weeks ago. Really nice eating.
Beautiful fish but not as big as the one you got.

Bravo Roberto, good eats there.. you have me dreaming of Tahitian Poisson cru with a Caribbean flair..

1 pound very fresh high-grade ahi tuna or parrot fish diced in neat 1/2-inch cubes
1/2 cup fresh lime juice
1/2 cup coconut milk
1/2 cup diced peeled and seeded cucumber
4 to 5 scallions, green and white portions, split lengthwise and minced
1 fresh hot small green or red chile, seeded and minced, optional
Several tablespoons shredded coconut, optional
3/4 teaspoon sea salt, or more to taste
Freshly ground pepper
1 medium tomato, seeded and squeezed to eliminate liquid, diced



Combine in a medium bowl the fish, lime juice, coconut milk, cucumber, scallions, optional chile and coconut, salt, and pepper. Refrigerate 30 minutes to 1 hour. Mix in the tomato and serve right away.
